Ingredients
- 2 salmon fillets (skin-on or skinless)
- 1/2 cup (120ml) double cream (or heavy cream)
- 2 tbsp fresh dill, chopped (or 1 tsp dried dill)
- 1 tbsp lemon juice
- 1 small shallot, finely minced (or 1 garlic clove)
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tbsp butter (optional, for richness)
- 1/4 cup (60ml) vegetable or fish stock (optional, for moisture)
Instructions
- Prep the Salmon: Pat the fillets dry and season with salt and pepper.
- Set Up the Instant Pot:
- Add the butter (if using) to the pot and use Sauté mode to melt it.
- Add the shallot/garlic and cook for 1 minute until fragrant.
- Pour in the stock (if using) to deglaze, then turn off Sauté mode.
- Slow Cook:
- Place salmon fillets in the pot.
- Pour the double cream over the salmon.
- Sprinkle dill and lemon juice on top.
- Cover with the lid and set to Slow Cook (Normal) for 1 to 1.5 hours (salmon should be tender but not overcooked).
- Finish & Serve:
