Instant Pot Slow-Cooked Salmon with Dill & Double Cream

Here’s a simple and delicious recipe for Slow-Cooked Salmon with Dill and Double Cream in an Instant Pot using the Slow Cook function:

Creamy, tender, and full of flavor!

Ingredients

  • 2 salmon fillets (skin-on or skinless)
  • 1/2 cup (120ml) double cream (or heavy cream)
  • 2 tbsp fresh dill, chopped (or 1 tsp dried dill)
  • 1 tbsp lemon juice
  • 1 small shallot, finely minced (or 1 garlic clove)
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp butter (optional, for richness)
  • 1/4 cup (60ml) vegetable or fish stock (optional, for moisture)

Instructions

  1. Prep the Salmon: Pat the fillets dry and season with salt and pepper.
  2. Set Up the Instant Pot:
  • Add the butter (if using) to the pot and use Sauté mode to melt it.
  • Add the shallot/garlic and cook for 1 minute until fragrant.
  • Pour in the stock (if using) to deglaze, then turn off Sauté mode.
  1. Slow Cook:
  • Place salmon fillets in the pot.
  • Pour the double cream over the salmon.
  • Sprinkle dill and lemon juice on top.
  • Cover with the lid and set to Slow Cook (Normal) for 1 to 1.5 hours (salmon should be tender but not overcooked).
  1. Finish & Serve:
  • Carefully remove salmon with a spatula.
  • If desired, simmer the cream sauce on Sauté mode for 2–3 mins to thicken slightly.
  • Spoon the creamy dill sauce over the salmon and serve with steamed veggies, rice, or crusty bread.

Tips

  • Don’t overcook: Salmon is delicate—check at 1 hour to avoid dryness.
  • For extra flavor: Add a splash of white wine before the cream.
  • No Slow Cook function? Use Manual/Pressure Cook for 2–3 mins with quick release (less creamy but faster).
